1 pound Red Bliss Potatoes, ½" diced
1 Tbsp. Garlic, chopped
2 Tbsp. Scallions, sliced ¼"
2 tsp Thyme Leaves, chopped
4 Tbsp. Butter
½ cup Half and Half
Salt and Pepper - to taste
PROCEDURES
Fill a large pot half full with water and bring to a boil. Add the potatoes and boil for 15 - 20 minutes or until tender. Drain off the potatoes and add the remaining ingredients. Mash the potatoes using a hand masher and serve hot. ENJOY!
