Conch Fritters
Whole Eggs 2 each
Milk ¼ cup
Key Lime Juice 2 TBSP
Conch Meat, chopped 1 pound
Onions, diced ¼ cups
Red peppers, diced ¼ cup
Thyme, dry 1 tsp
Salt and Pepper 1 ½ tsp
Baking Powder 2 tsp
Bread Crumbs ½ cup
All Purpose Flour ½ cup
Place the eggs, milk, lime juice conch meat onions and peppers in a mixing bowl. Mix well to evenly combine. In a separate mixing bowl, add thyme, salt and pepper, baking powder bread crumbs and flour. Mix well to combine. Add the dry mixture slowly to the conch mixture and mix well until a firm batter is developed. Refrigerate until needed.
To Cook
Use a small portable deep fryer and heat vegetable oil to 350ºF. Submerge fry basket and carefully add the fritter batter using a small ice cream scoop. Fry fritters for 2 ½ minutes or until fully cooked. Serve with your favorite dipping sauce. Enjoy!!
