Black Bean and Corn Salsa is a flavorful accompaniment to chicken and fresh fish dishes.
10 oz. 1 can Black beans, canned
10 oz. 1 can Corn kernels, canned
4 Tbsp. Red onions, diced ¼"
4 Tbsp. Red bell peppers, diced ¼"
4 Tbsp. Green bell peppers, diced ¼"
2 Tbsp. Cilantro, chopped
4 Tbsp. Olive oil, extra virgin
Salt and pepper to taste
Drain the corn and black beans. Rinse the beans in a colander to remove the extra bean juice. Add all the remaining ingredients and mix with a rubber spatula. Serve chilled.
